A fresh and flavorful chickpea salad perfect for a quick lunch or side dish, packed with herbs and zesty lime.

Ingredients

Dressing

  • 3 tbsp extra-virgin olive oil
  • 4 cloves garlic minced
  • 2 medium limes juiced
  • 1.5 tsp cumin
  • 0.5 tsp kosher salt
  • 0.25 tsp cayenne pepper
  • 0.5 medium red onion finely diced
  • 0.75 cup chopped parsley or cilantro (also works)
  • 3 cans 15-oz. chickpeas drained and rinsed

Instructions 

  • Whisk together olive oil, garlic, lime juice, cumin, salt, and cayenne in a large bowl.
  • Add diced onion, chopped parsley, and chickpeas; stir gently to combine.
  • Serve immediately or refrigerate for a few hours to meld flavors.

Notes

Best enjoyed after flavors meld for a few hours in the fridge.
