Delicious and healthy chickpea muffins perfect for a quick snack or breakfast, packed with plant-based ingredients and flavor.

Instructions
Preheat oven to 350°F (175°C) and prepare muffin tin.
Blend chickpeas, banana, maple syrup, almond milk, coconut oil, and vanilla until smooth.
Mix dry ingredients in a bowl. Combine with wet mixture and fold in optional add-ins.
Divide batter into muffin cups, filling about three-quarters full.
Bake for 18-22 minutes until golden and a toothpick comes out clean. Cool before serving.
Notes
For extra flavor, add a dash of nutmeg or a handful of berries.
