Delicious and healthy chickpea muffins perfect for a quick snack or breakfast, packed with plant-based ingredients and flavor.

Ingredients

  • 1 ½ cups cooked chickpeas (or 1 can, drained and rinsed)
  • 1 medium ripe banana
  • ½ cup maple syrup (or agave nectar)
  • ¼ cup unsweetened almond milk (or any plant-based milk)
  • ¼ cup coconut oil, melted (or neutral oil like canola)
  • 1 tsp vanilla extract
  • 1 cup oat flour (or blended rolled oats)
  • ½ cup whole wheat flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ cup vegan white chocolate chips or chopped walnuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Blend chickpeas, banana, maple syrup, almond milk, coconut oil, and vanilla until smooth.
  • Mix dry ingredients in a bowl. Combine with wet mixture and fold in optional add-ins.
  • Divide batter into muffin cups, filling about three-quarters full.
  • Bake for 18-22 minutes until golden and a toothpick comes out clean. Cool before serving.

Notes

For extra flavor, add a dash of nutmeg or a handful of berries.
