Delicious and healthy chickpea muffins perfect for a quick snack or breakfast. These moist muffins are easy to make and packed with plant-based ingredients.

Ingredients

  • 1.5 cups cooked chickpeas (or 1 can, drained and rinsed)
  • 1 medium ripe banana
  • 0.5 cup maple syrup (or agave nectar)
  • 0.25 cup unsweetened almond milk (or any plant-based milk)
  • 0.25 cup coconut oil (melted or neutral oil like canola)
  • 1 tsp vanilla extract
  • 1 cup oat flour (or blended rolled oats)
  • 0.5 cup whole wheat flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp cinnamon
  • 0.25 tsp salt
  • 0.25 cup vegan white chocolate chips or chopped walnuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Blend chickpeas, banana, syrup, almond milk, oil, and vanilla until smooth.
  • Mix dry ingredients in a bowl. Combine with wet mixture gently.
  • Fold in optional chocolate chips or walnuts if desired.
  • Divide batter into muffin cups and bake for 18-22 minutes.
  • Cool muffins before serving. Enjoy!

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
