1mediumripe banana
0.5cupmaple syrup(or agave nectar)
0.25cupunsweetened almond milk(or any plant-based milk)
0.25cupcoconut oil(melted or neutral oil like canola)
1tspvanilla extract
1cupoat flour(or blended rolled oats)
0.5cupwhole wheat flour
1.5tspbaking powder
0.5tspbaking soda
0.5tspcinnamon
0.25tspsalt
0.25cupvegan white chocolate chips or chopped walnuts(optional)
Instructions
Preheat oven to 350°F (175°C) and prepare muffin tin.
Blend chickpeas, banana, syrup, almond milk, oil, and vanilla until smooth.
Mix dry ingredients in a bowl. Combine with wet mixture gently.
Fold in optional chocolate chips or walnuts if desired.
Divide batter into muffin cups and bake for 18-22 minutes.
