These savory chickpea flour muffins are packed with vegetables and flavor, perfect for a nutritious snack or breakfast.

Ingredients

Dry Ingredients

  • 1.5 cups Bob's Red Mill Chickpea and Fava Bean Flour
  • 3 tbsp nutritional yeast
  • 1 tsp sea salt
  • 0.5 tsp black salt (optional)
  • 0.5 tsp black pepper
  • 1 tsp baking powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp dried basil

Wet Ingredients

  • 1.5 cups water or oat milk
  • 1 tbsp olive oil
  • 0.5 cup vegan cheddar (shredded)
  • 0.5 cup red bell pepper (finely chopped)
  • 0.5 cup jalapeno pepper (finely chopped)
  • 0.5 cup fresh tomato (finely chopped)
  • 0.5 cup fresh spinach (finely chopped)
  • 0.5 cup fresh corn
  • 0.25 cup green onion (finely chopped)
  • 1 clove garlic (grated)

Instructions 

  • Preheat oven to 375°F and grease a muffin tin.
  • Mix dry ingredients in a bowl, then add water and stir to pancake batter consistency.
  • Add remaining ingredients, stir gently, then dollop into muffin tin.
  • Bake for 30 minutes, cool for 10 minutes, then serve with toppings.

Notes

Enjoy with extra black salt, hot sauce, and fresh avocado for added flavor.
