A flavorful and easy-to-make dish featuring seared chicken thighs served over aromatic pearl couscous with fresh vegetables and herbs.

Ingredients

Protein

  • 4 pieces Chicken Thighs, bone-in, skin-on
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 2 teaspoons Fresh Thyme, chopped
  • 1 whole Lemon, thinly sliced
  • 1 cup Cherry Tomatoes, halved
  • 1.5 cups Chicken Broth
  • 1 cup Pearl Couscous

Garnish

  • to taste Salt and Pepper
  • for garnish Fresh Parsley

Instructions 

  • Preheat oven to 375°F (190°C). Season chicken thighs with salt and pepper.
  • Heat 1 tablespoon olive oil in an ovenproof skillet, sear chicken skin-side down until golden, about 6-8 minutes. Flip and cook 2 more minutes. Remove and set aside.
  • Add remaining olive oil, sauté garlic and thyme until fragrant, about 1 minute. Stir in couscous, coat well.
  • Pour in chicken broth, bring to simmer. Nestle chicken back, add lemon slices and cherry tomatoes. Transfer skillet to oven and bake 20-25 minutes.
  • Rest for a few minutes, garnish with parsley, and serve.

Notes

Ensure chicken skin is crispy for best flavor.
