A flavorful and easy-to-make dish featuring seared chicken thighs served over aromatic pearl couscous with fresh vegetables and herbs.

2teaspoonsFresh Thyme, chopped
1wholeLemon, thinly sliced
1cupCherry Tomatoes, halved
1.5cupsChicken Broth
1cupPearl Couscous

Instructions
Preheat oven to 375°F (190°C). Season chicken thighs with salt and pepper.
Heat 1 tablespoon olive oil in an ovenproof skillet, sear chicken skin-side down until golden, about 6-8 minutes. Flip and cook 2 more minutes. Remove and set aside.
Add remaining olive oil, sauté garlic and thyme until fragrant, about 1 minute. Stir in couscous, coat well.
Pour in chicken broth, bring to simmer. Nestle chicken back, add lemon slices and cherry tomatoes. Transfer skillet to oven and bake 20-25 minutes.
Rest for a few minutes, garnish with parsley, and serve.
