Instructions
Spray a large skillet with oil and cook chicken thighs until browned and cooked through, about 6-8 minutes per side.
In a small bowl, whisk together soy sauce, honey, rice vinegar, brown sugar, sesame oil, and minced garlic and ginger to make the sauce.
Steam or sauté broccoli until tender, about 5 minutes.
Slice cooked chicken and combine with pineapple chunks and vegetables. Pour sauce over and toss to coat.
Serve over rice or noodles if desired.
Notes
For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking.
