Enjoy flavorful chicken teriyaki served over fresh vegetables and pineapple for a delicious and easy meal.

Ingredients

  • 6 pieces boneless skinless chicken thighs
  • 2 teaspoons honey
  • 6 cloves garlic cloves (or 1 teaspoon garlic powder)
  • 1 inch ginger (or 1/4 teaspoon powdered ginger)
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 2 tablespoons brown sugar
  • 3 tablespoons low sodium soy sauce
  • 1 teaspoon sesame seed oil
  • 0.5 teaspoon rice vinegar
  • 2 cloves garlic cloves (microplaned or finely minced)
  • 0.5 inch ginger (microplaned or finely minced)
  • 2 cups pineapple chunks (fresh or canned)
  • 1 large head broccoli (about 10-12 ounces (300-350 grams yields approximately 4 cups of florets))
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons garlic powder

Instructions 

  • Spray a large skillet with oil and cook chicken thighs until browned and cooked through, about 6-8 minutes per side.
  • In a small bowl, whisk together soy sauce, honey, rice vinegar, brown sugar, sesame oil, and minced garlic and ginger to make the sauce.
  • Steam or sauté broccoli until tender, about 5 minutes.
  • Slice cooked chicken and combine with pineapple chunks and vegetables. Pour sauce over and toss to coat.
  • Serve over rice or noodles if desired.

Notes

For extra flavor, marinate the chicken in the sauce for 30 minutes before cooking.
