spinach or sun-dried tomato wraps or tortillas
Instructions
Bring water to a boil, stir in couscous, cover, and let stand for 5 minutes. Fluff with a fork.
Mix parsley, mint, lemon juice, oil, garlic, 1/8 teaspoon salt, and pepper in a small bowl.
Toss chicken tenders with 1 tablespoon of herb mixture and remaining salt. Cook in a skillet until done, then cut into bite-sized pieces.
Stir remaining herb mixture into couscous along with tomato and cucumber.
Spread 3/4 cup of couscous mixture on each wrap, add chicken, roll up, and serve.
Notes
Use fresh herbs for the best flavor and consider adding a squeeze of extra lemon before serving.
