A flavorful and fresh wrap combining tender chicken, fluffy couscous, and vibrant herbs, perfect for a quick lunch or dinner.

Ingredients

Water and Couscous

  • 0.5 cup water
  • 0.33333334326744 cup couscous, preferably whole-wheat

Fresh Herbs and Lemon Dressing

  • 1 cup chopped fresh parsley
  • 0.5 cup chopped fresh mint
  • 0.25 cup lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons minced garlic
  • 0.25 teaspoon salt, divided
  • 0.25 teaspoon freshly ground pepper

Chicken and Vegetables

  • 1 pound chicken tenders
  • 1 medium tomato, chopped
  • 1 cup chopped cucumber

Wraps

  • 4 10-inch spinach or sun-dried tomato wraps or tortillas

Instructions 

  • Bring water to a boil, stir in couscous, cover, and let stand for 5 minutes. Fluff with a fork.
  • Mix parsley, mint, lemon juice, oil, garlic, 1/8 teaspoon salt, and pepper in a small bowl.
  • Toss chicken tenders with 1 tablespoon of herb mixture and remaining salt. Cook in a skillet until done, then cut into bite-sized pieces.
  • Stir remaining herb mixture into couscous along with tomato and cucumber.
  • Spread 3/4 cup of couscous mixture on each wrap, add chicken, roll up, and serve.

Notes

Use fresh herbs for the best flavor and consider adding a squeeze of extra lemon before serving.
