This delicious and nutritious bowl combines roasted sweet potatoes, tender chicken, and creamy Greek yogurt sauce for a satisfying high-protein meal.

Ingredients

Protein

  • 2 pieces boneless skinless chicken breasts (cubed)
  • 2 medium sweet potatoes (peeled and diced)
  • 1 cup brown rice (uncooked)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • to taste Salt & pepper
  • 0.5 cup plain Greek yogurt
  • 1 tbsp tahini or lemon juice
  • 1 clove garlic (minced)
  • 1–2 tbsp water (to thin sauce)

Garnish

  • optional Fresh parsley (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes in olive oil, paprika, salt, and pepper. Roast for 25 minutes.
  • Cook chicken in a skillet over medium heat until browned and cooked through.
  • Mix Greek yogurt with tahini (or lemon juice), minced garlic, and water to make sauce.
  • Cook brown rice according to package instructions.
  • Assemble bowls with rice, roasted sweet potatoes, chicken, and drizzle with sauce. Garnish with parsley if desired.

Notes

Feel free to add your favorite vegetables or herbs for extra flavor.
