A quick and flavorful chicken stir fry with fresh vegetables and a savory sauce, perfect for a weeknight dinner.

Ingredients

Marinade

  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 tbsp soy sauce (for chicken marinade)
  • 1 tbsp cornstarch (for chicken marinade)

Vegetables and Sauce

  • 1 head broccoli, cut into florets
  • 2 medium carrots, thinly sliced or julienned
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/4 cup chicken broth
  • 1 tbsp cornstarch (for sauce)

Garnish

  • to taste toasted sesame seeds (for garnish)
  • to taste sliced green onions (for garnish)

Instructions 

  • Marinate chicken with soy sauce and cornstarch for 10 minutes.
  • Mix soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, chicken broth, and cornstarch to make sauce.
  • Cook chicken in a skillet with 1/2 tbsp olive oil until golden, then set aside.
  • Stir-fry vegetables in the same skillet with remaining oil until tender-crisp.
  • Return chicken to skillet, add sauce, and simmer until thickened. Garnish and serve.

Notes

Use fresh vegetables for best flavor and texture.
