Ingredients
Marinade

boneless, skinless chicken breast, cut into 1-inch pieces

Vegetables and Sauce

broccoli, cut into florets

carrots, thinly sliced or julienned

bell pepper, thinly sliced

garlic, minced

fresh ginger, grated

soy sauce

honey

rice vinegar

sesame oil

chicken broth

Instructions
Marinate chicken with soy sauce and cornstarch for 10 minutes.
Mix soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, chicken broth, and cornstarch to make sauce.
Cook chicken in a skillet with 1/2 tbsp olive oil until golden, then set aside.
Stir-fry vegetables in the same skillet with remaining oil until tender-crisp.
Return chicken to skillet, add sauce, and simmer until thickened. Garnish and serve.
Notes
Use fresh vegetables for best flavor and texture.
