A delicious and easy chicken salad sandwich perfect for a quick lunch or light dinner.

Ingredients

  • 2 cups cooked chicken breasts, shredded or chopped
  • 0.75 cups sliced celery
  • 0.5 cups mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon snipped fresh dill
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 8 slices white bread

Lettuce leaves, optional

Instructions 

  • In a large bowl, combine the cooked chicken with celery, mayonnaise, mustard, dill, salt, and pepper.
  • Spread the chicken salad onto slices of white bread.
  • Add lettuce leaves, if desired, and top with remaining bread slices.

Notes

You can prepare the chicken salad ahead of time for extra convenience.
