Ingredients

Protein

  • 2 cups cooked shredded chicken (rotisserie works well)
  • 0.5 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 0.5 teaspoon garlic powder
  • 1 stalk celery (finely chopped)
  • 2 tablespoons red onion (finely diced)
  • 2 tablespoons fresh parsley (optional but recommended)
  • to taste Salt and black pepper
  • 8-10 large lettuce leaves (romaine or butter lettuce)

Instructions 

  • Place shredded chicken in a bowl, then add mayonnaise, Dijon mustard, lemon juice, and garlic powder. Mix until coated and creamy.
  • Add chopped celery, red onion, and parsley; stir to combine. Season with salt and pepper to taste.
  • Cover and refrigerate for 20-30 minutes to let flavors meld.
  • Prepare lettuce leaves by rinsing and drying thoroughly.
  • Spoon chicken salad into each leaf, fold or roll, and serve.

Notes

For extra flavor, add a dash of hot sauce or a squeeze of additional lemon.
