Instructions
Place shredded chicken in a bowl, then add mayonnaise, Dijon mustard, lemon juice, and garlic powder. Mix until coated and creamy.
Add chopped celery, red onion, and parsley; stir to combine. Season with salt and pepper to taste.
Cover and refrigerate for 20-30 minutes to let flavors meld.
Prepare lettuce leaves by rinsing and drying thoroughly.
Spoon chicken salad into each leaf, fold or roll, and serve.
Notes
