Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 unit cucumber, diced
  • 1 unit bell pepper, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice

Instructions 

  • Combine shredded chicken and rice in a large bowl.
  • Add cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  • Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  • Pour dressing over the salad and toss gently.
  • Serve chilled or at room temperature.
