A quick and healthy pizza alternative using rice cakes topped with fresh vegetables, chicken, and cheese.
Ingredients
Rice Cakes

brown rice or buckwheat rice cakes

pasta sauce, low sodium

baby spinach
(fresh)

onion, diced

mushroom, thinly sliced

red sweet pepper, diced

roasted cooked chicken breast, diced

mozzarella cheese, part skim milk, shredded

sun-dried tomato herb blend
(no salt or your favorite seasoning blend)
Instructions
Preheat oven to 350°F (175°C).
Spread pasta sauce over each rice cake and place on a baking tray.
Layer with vegetables: spinach, diced onion, mushrooms, and red pepper.
Top with diced chicken, shredded cheese, and seasoning.
Bake for 10-12 minutes until heated through and cheese is lightly browned.
