A quick and healthy pizza alternative using rice cakes topped with fresh vegetables, chicken, and cheese.

Ingredients

Rice Cakes

  • 10 grams brown rice or buckwheat rice cakes
  • 3 tbsp pasta sauce, low sodium
  • 5 leaves baby spinach (fresh)
  • 1 tbsp onion, diced
  • 1 piece mushroom, thinly sliced
  • 1 tbsp red sweet pepper, diced
  • 3 tbsp roasted cooked chicken breast, diced
  • 2 tbsp mozzarella cheese, part skim milk, shredded
  • 1/4 tsp sun-dried tomato herb blend (no salt or your favorite seasoning blend)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Spread pasta sauce over each rice cake and place on a baking tray.
  • Layer with vegetables: spinach, diced onion, mushrooms, and red pepper.
  • Top with diced chicken, shredded cheese, and seasoning.
  • Bake for 10-12 minutes until heated through and cheese is lightly browned.

Notes

Feel free to customize with your favorite seasonings or additional vegetables.
