Instructions
Chop the cooked chicken into small pieces and prepare pesto if making from scratch.
Blend all dressing ingredients until smooth, then toss with shredded lettuce and sliced tomatoes.
Mix chopped chicken with pesto until evenly coated.
Lay each wrap flat, add salad mixture, pesto-coated chicken, and optional Parmesan. Drizzle with leftover dressing.
Fold wraps tightly, then serve as is or toast in a skillet for 2-3 minutes per side until golden.
Notes
For a warmer wrap, lightly toast in a skillet before serving.
