These savory chicken muffins are perfect for a quick, protein-packed snack or meal. Easy to make and customizable with your favorite veggies.

Ingredients

Protein

  • 2 cups chicken (cooked and shredded)
  • 2 large eggs eggs

Vegetables

  • 1 cup veggies (finely chopped or shredded) (onion, broccoli, zucchini, bell peppers)
  • 1/2 cup cheddar cheese (divided)
  • 2 tbsp mayonnaise
  • 1/4 cup all-purpose flour
  • 1/2 tbsp apple cider vinegar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin and set aside 1/3 of the cheese.
  • Mix all ingredients except reserved cheese until well combined. Fill muffin cups and bake for 10-15 minutes.
  • Remove from oven, sprinkle with remaining cheese, and bake for another 5 minutes until golden.
  • Let cool slightly and enjoy!

Notes

Use fresh vegetables for best flavor and texture.
