Instructions
Heat oil in a skillet over medium-high heat.
Add chicken strips and cook for about 3 minutes until no longer pink. Stir in sliced peppers and onions; cook for another 3-5 minutes.
Pour in water and fajita seasoning; stir until well coated. Prepare rice as per package instructions and mix with sour cream.
Layer rice mixture, chicken mixture, and cheese on a tortilla. Roll up tightly, tucking in sides. Optional: toast in a pan until golden brown.
Notes
