Instructions
Heat oil in a skillet over medium-high heat.
Add chicken strips and cook for about 3 minutes until no longer pink. Stir in sliced peppers and onions, cook for another 3-5 minutes.
Pour in water and fajita seasoning, stir to coat. Prepare rice as per package, then mix with sour cream.
Layer rice mixture, chicken, and cheese on a tortilla. Roll up tightly, tucking sides in. Optional: toast in a pan until golden.
Notes
