Ingredients

Cooking Oil

  • 2 tablespoons Cooking Oil

Boneless Skinless Chicken Breast

  • 1 pound Boneless Skinless Chicken Breast (Cut into strips)

Peppers

  • 2 peppers Peppers (Cut into strips)

Small Onion

  • 1 small onion Small Onion (Sliced into strips)

Fajita Seasoning

  • 1.12 ounces Fajita Seasoning

Water

  • 0.25 cup Water

Prepared Rice Cilantro and Lime Flavor

  • 8.5 ounce Prepared Rice Cilantro and Lime Flavor (Prepared according to package)

Sour Cream

  • 1/3 cup Sour Cream

Monterey Jack Cheese

  • 1.5 cups Shredded Monterey Jack Cheese

Large Tortillas

  • 7-8 large Tortillas (For wrapping)

Instructions 

  • Heat oil in a skillet over medium-high heat.
  • Add chicken strips and cook for about 3 minutes until no longer pink. Stir in sliced peppers and onions, cook for another 3-5 minutes.
  • Pour in water and fajita seasoning, stir to coat. Prepare rice as per package, then mix with sour cream.
  • Layer rice mixture, chicken, and cheese on a tortilla. Roll up tightly, tucking sides in. Optional: toast in a pan until golden.

Notes

For extra flavor, add fresh cilantro or a squeeze of lime before serving.
