A delicious and easy-to-make Chicken Caesar Pasta Salad perfect for a quick lunch or dinner, combining fresh vegetables, tender chicken, and creamy Caesar dressing.

8ouncesrotini pasta
2cupscooked chicken breast, diced or shredded
1cupromaine lettuce, chopped
1/2cupcherry tomatoes, halved
1/2cupcucumber, diced
1/4cupred onion, thinly sliced
1/2cupgrated Parmesan cheese
1/2cupCaesar dressing(store-bought or homemade)
to tasteSalt and pepper

Instructions
Cook the rotini pasta in boiling salted water for 8-10 minutes until al dente, then drain and rinse with cold water.
If using raw chicken, cook until internal temperature reaches 165°F (75°C), then dice or shred and let rest.
In a large bowl, combine cooled pasta, chicken, lettuce, tomatoes, cucumber, and red onion.
Sprinkle Parmesan cheese over the mixture, pour Caesar dressing, and toss gently to coat evenly.
Season with salt and pepper as needed, top with croutons, and chill for 30 minutes before serving.
Notes
For a milder onion flavor, soak red onion slices in cold water for 10 minutes before draining.
