A delicious and easy-to-make Chicken Caesar Pasta Salad perfect for a quick lunch or dinner, combining fresh vegetables, tender chicken, and creamy Caesar dressing.

Ingredients

Pasta

  • 8 ounces rotini pasta
  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • to taste Salt and pepper
  • Optional croutons for topping

Instructions 

  • Cook the rotini pasta in boiling salted water for 8-10 minutes until al dente, then drain and rinse with cold water.
  • If using raw chicken, cook until internal temperature reaches 165°F (75°C), then dice or shred and let rest.
  • In a large bowl, combine cooled pasta, chicken, lettuce, tomatoes, cucumber, and red onion.
  • Sprinkle Parmesan cheese over the mixture, pour Caesar dressing, and toss gently to coat evenly.
  • Season with salt and pepper as needed, top with croutons, and chill for 30 minutes before serving.

Notes

For a milder onion flavor, soak red onion slices in cold water for 10 minutes before draining.
