A quick and delicious salad combining pasta, chicken, fresh vegetables, and a creamy Caesar dressing for a satisfying meal.

Ingredients

Protein

  • 2 cups cooked chicken breast, diced or shredded
  • 8 ounces rotini or penne pasta

Vegetables

  • 3 cups Romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved

Cheese & Dressing

  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Caesar dressing
  • 1/4 cup croutons

Other

  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions 

  • Cook pasta in boiling salted water until al dente, then drain and rinse with cold water.
  • If using raw chicken, cook with olive oil, salt, and pepper until golden and cooked through; otherwise, shred pre-cooked chicken.
  • Combine pasta, lettuce, tomatoes, and chicken in a large bowl.
  • Pour Caesar dressing over the mixture and toss gently to coat evenly.
  • Sprinkle Parmesan cheese, toss lightly, top with croutons, and serve immediately.

Notes

For extra flavor, add freshly cracked black pepper or additional Parmesan cheese before serving.
