A delicious and easy-to-make pasta salad with grilled chicken, crisp romaine, and a creamy Caesar dressing, perfect for a quick lunch or dinner.

boneless skinless chicken breasts or thighs
Dressing

mayonnaise

plain Greek yogurt or sour cream

Instructions
Cook pasta in salted boiling water until al dente, then drain and rinse under cool water. Transfer to a large bowl.
Season chicken with salt, pepper, garlic, and paprika. Cook in olive oil until golden and cooked through, then rest and slice.
Whisk together mayonnaise, Greek yogurt, lemon juice, mustard, Worcestershire, garlic, and anchovy paste if using. Season with salt and pepper.
Toss pasta with most of the dressing, then add romaine, cherry tomatoes, and chicken. Gently toss to combine.
Sprinkle with Parmesan and top with croutons just before serving. Serve immediately or refrigerate without croutons for up to 3 days.
Notes
For extra flavor, marinate the chicken briefly before cooking or add more Parmesan for richness.
