A delicious and easy-to-make pasta salad with grilled chicken, crisp romaine, and a creamy Caesar dressing, perfect for a quick lunch or dinner.

Ingredients

Pasta

  • 8 oz short pasta (penne, rotini, or farfalle)

Vegetables

  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved (optional)

Protein

  • 1 lb boneless skinless chicken breasts or thighs

Dressing

  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt or sour cream
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 small garlic clove minced
  • ½ tsp anchovy paste (optional)

Additional

  • to taste Salt and black pepper

Toppings

  • ½ cup shaved Parmesan (plus extra for serving)
  • 1 cup croutons or toasted bread cubes

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and rinse under cool water. Transfer to a large bowl.
  • Season chicken with salt, pepper, garlic, and paprika. Cook in olive oil until golden and cooked through, then rest and slice.
  • Whisk together mayonnaise, Greek yogurt, lemon juice, mustard, Worcestershire, garlic, and anchovy paste if using. Season with salt and pepper.
  • Toss pasta with most of the dressing, then add romaine, cherry tomatoes, and chicken. Gently toss to combine.
  • Sprinkle with Parmesan and top with croutons just before serving. Serve immediately or refrigerate without croutons for up to 3 days.

Notes

For extra flavor, marinate the chicken briefly before cooking or add more Parmesan for richness.
