A flavorful and nutritious bowl combining roasted sweet potatoes, seasoned chicken, rice, and fresh vegetables, topped with a creamy spicy sauce.

Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes (peeled and cubed)
  • 1 tbsp olive oil
  • 0.5 tsp paprika
  • 0.25 tsp garlic powder
  • Salt and black pepper to taste Salt and black pepper
  • 1 lb boneless, skinless chicken breast (cut into 1-inch cubes)
  • 1 tbsp olive oil

  • 0.5 tsp onion powder

Cooked Rice

  • 2 cups cooked white or brown rice

Sauce

  • 0.5 cup Greek yogurt (plain, or mayonnaise)
  • 1 tbsp lime juice
  • 1 tsp sriracha
  • 0.5 tsp cumin
  • 0.25 tsp paprika
  • Pinch optional cayenne pepper
  • Salt to taste Salt

Vegetables

  • 1 cup steamed or sautéed green vegetables (e.g., spinach, broccoli, chopped cucumber)

Garnish

  • Fresh cilantro or parsley chopped Fresh cilantro or parsley (for garnish)

Instructions 

  • Toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Roast at 400°F (200°C) for 20-25 mins, flipping halfway.
  • Season chicken with garlic powder, onion powder, salt, and pepper. Cook in a skillet with olive oil for 5-7 mins until golden and cooked through.
  • Mix Greek yogurt, lime juice, sriracha, cumin, paprika, and salt to make the sauce.
  • Cook rice and prepare green vegetables. Assemble bowls with rice, roasted sweet potatoes, chicken, and vegetables. Drizzle with sauce and garnish.
