Ingredients

Rice

  • 0.5 cup cooked rice

Protein

  • 1 piece chicken breast boneless skinless

Vegetables

  • 0.5 piece red bell pepper sliced
  • 0.5 piece yellow bell pepper sliced
  • 0.5 piece green bell pepper sliced

Spices & Oils

  • 0.5 tsp ground black pepper
  • 3 Tbsp extra virgin olive oil
  • 1 tsp salt
  • 0.5 tsp paprika

Garnish

  • fresh dill (for garnish)

Instructions 

  • Cook rice according to package instructions.
  • Slice chicken and bell peppers; mix with spices and olive oil, then marinate for 5 minutes.
  • Saute marinated chicken and peppers in a skillet for 15 minutes, stirring occasionally.
  • Combine cooked chicken and peppers with rice.
  • Garnish with fresh dill before serving.
