Ingredients

Protein

  • 1 pound boneless skinless chicken breasts or thighs
  • 2 cups cooked rice (white, brown, or jasmine)
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup broccoli florets (optional) (can be omitted)
  • ½ teaspoon dried Italian herbs (optional) (for added flavor)

Instructions 

  • Preheat oven to 375°F (190°C). Cook chicken until browned, then dice.
  • Mix cooked rice, Alfredo sauce, diced chicken, broccoli (if using), garlic powder, Italian herbs, salt, and pepper in a bowl.
  • Transfer mixture to a casserole dish, top with mozzarella and Parmesan cheese, and dot with butter.
  • Bake for 20-25 minutes until bubbly and golden on top.
  • Let rest for 5 minutes before serving.

Notes

You can substitute chicken with turkey or add extra vegetables for variety.
