10ouncespenne pasta(cooked al dente, GF if needed)
3cupsdiced cooked chicken
Sauce Base
3tablespoonsbutter or ghee
2tablespoonsflour(use gluten-free blend if needed)
1.5teaspoonsminced garlic
1cupwhole milk
2cupsheavy cream
3/4cupgrated parmesan cheese
2cupsshredded mozzarella cheese
Seasonings
to tastesalt and pepper
Cooking spray
2tablespoonscooking oil spray(avocado or olive oil)

Instructions
Preheat oven to 375°F (190°C). Cook pasta according to package. Sauté chicken until cooked. Melt butter, cook garlic 30 sec, whisk in flour 1 min. Gradually add milk and cream, simmer until thickened. Season with salt and pepper, then stir in parmesan until melted. Combine pasta, chicken, and sauce. Layer in greased dish, top with mozzarella. Bake 20 mins until golden.
