Ingredients
Broth and Grains

low-sodium vegetable or chicken broth

uncooked quinoa (rinsed well)

Instructions
Cook quinoa in broth until tender, about 15 minutes.
Sauté onions and carrots in olive oil until softened.
Mix cooked quinoa, vegetables, beans, milk, yogurt, and cheeses; season with salt, pepper, oregano, garlic, and cayenne.
Transfer mixture to a baking dish and bake at 375°F (190°C) for 15-20 minutes until bubbly and golden.
Notes
For extra flavor, sprinkle with fresh herbs before serving.
