A hearty and nutritious casserole combining quinoa, broccoli, beans, and melted cheese for a satisfying meal.

Ingredients

Broth and Grains

  • 2 cups low-sodium vegetable or chicken broth
  • 1 cup uncooked quinoa (rinsed well)

Seasonings and Oils

  • 1/4 tsp ground black pepper
  • 1/2 tsp kosher salt
  • 2 tbsp extra virgin olive oil

Vegetables and Beans

  • 1 lb broccoli florets
  • 3 medium carrots, diced
  • 1 15-oz can cannellini beans, drained and rinsed

Dairy and Cheese

  • 1 cup non-fat milk
  • 1 cup plain nonfat Greek yogurt
  • 3/4 cup shredded mozzarella, fontina, or provolone cheese
  • 1 small yellow onion, finely diced
  • 1/8 tsp cayenne pepper
  • 3/4 cup sharp cheddar cheese

Instructions 

  • Cook quinoa in broth until tender, about 15 minutes.
  • Sauté onions and carrots in olive oil until softened.
  • Mix cooked quinoa, vegetables, beans, milk, yogurt, and cheeses; season with salt, pepper, oregano, garlic, and cayenne.
  • Transfer mixture to a baking dish and bake at 375°F (190°C) for 15-20 minutes until bubbly and golden.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
