Ingredients

Eggs

  • 6 large eggs

Cheddar cheese

  • 1 cup shredded cheddar cheese

Vegetables

  • 2 cups fresh spinach, chopped
  • 0.25 cup diced onion
  • 0.25 cup diced bell pepper

Liquids and seasonings

  • 0.5 cup milk
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon paprika

Garnish

  • as needed Fresh parsley for garnish

Instructions 

  • Chop spinach, onion, and bell pepper.
  • Whisk eggs, milk, salt, pepper, garlic powder, and paprika.
  • Sauté onions and peppers in olive oil until softened.
  • Add spinach and cook until wilted.
  • Pour egg mixture over vegetables, cook until set, add cheese, fold, and serve.
