A flavorful and healthy chicken bowl featuring grilled chicken, crisp romaine, and a creamy Caesar dressing.

Ingredients

Protein

  • 2 large boneless, skinless chicken breasts (about 1.1 lbs)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large romaine lettuce heads (chopped)
  • 1 cup freshly grated parmesan cheese
  • 1 1/2 cups croutons
  • 1/3 cup mayonnaise
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 small garlic clove (minced)

Seasonings

  • to taste Salt and pepper

Instructions 

  • Preheat grill to medium-high. Brush chicken with olive oil and season with garlic powder, herbs, salt, and pepper.
  • Grill chicken 6-7 minutes per side until cooked through. Rest and slice thinly.
  • Whisk mayonnaise, parmesan, lemon juice, mustard, Worcestershire, garlic, salt, and pepper to make dressing.
  • Toss chopped romaine with half of the dressing. Divide among bowls.
  • Top with sliced chicken, parmesan, croutons, and drizzle with remaining dressing. Serve immediately.

Notes

For extra flavor, marinate chicken briefly before grilling.
