Instructions
Preheat oven to 425℉ (220℃). Roast the squash for 30-35 minutes until soft, then cool and scoop 1/2 cup.
Blend the squash with 1/2 tsp olive oil, salt, pepper, smoked paprika, and chili powder until smooth.
Fry sage leaves in remaining olive oil until crispy, then set aside.
Butter bread slices with mayonnaise, spread squash mixture, add cheese, top with sage leaves, and assemble the sandwich.
Grill the sandwich in a skillet over medium-low heat until golden and crispy, about 3 minutes per side.
Slice and serve hot. Enjoy!

Use fresh sage for best flavor and ensure the squash is well roasted for a creamy texture.
