Ingredients

Dry ingredients

  • 1 ¾ cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • 1 ½ teaspoons ground cinnamon

Wet ingredients

  • ½ cup vegetable oil (or other neutral-tasting oil)
  • ¾ cup granulated white sugar
  • ½ cup light brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 ½ cups butternut squash puree
  • ¼ cup orange juice (or water)

Instructions 

  • Preheat oven to 350°F (180°C). Grease a 9x5 inch loaf pan.
  • Whisk dry ingredients together in a bowl.
  • Mix wet ingredients until combined.
  • Combine wet and dry, then pour into the pan.
  • Bake for 60-65 minutes until a toothpick comes out clean. Cool before slicing.
  • Store leftovers covered at room temperature for 2 days or refrigerated up to 1 week.
