Ingredients

Tomatoes

  • 4–5 pieces ripe tomatoes (Roma or heirlooms) (diced)
  • 1 clove small garlic clove (finely grated or minced)
  • 1 tbsp extra virgin olive oil
  • A few leaves fresh basil (chiffonade or torn)

  • 1/2 inch small baguette or rustic Italian loaf (sliced ½-inch thick)
  • 1–2 cloves garlic cloves (whole, for rubbing)
  • Extra olive oil for brushing or drizzling

Instructions 

  • Mix diced tomatoes with garlic, olive oil, basil, and salt. Let sit for 10–15 minutes.
  • Grill or toast bread slices until golden, about 1–2 minutes per side.
  • Rub warm bread with garlic cloves for flavor.
  • Top bread slices with tomato mixture, drizzle with olive oil, and garnish with basil.
  • Serve immediately while bread is crisp and topping is juicy.

Use ripe tomatoes for the best flavor and serve immediately for optimal texture.
