Instructions
Cook the bow tie pasta in heavily salted boiling water until al dente, then drain and toss with a little olive oil to prevent sticking. Let it cool to room temperature.
In a small bowl, whisk together pesto, olive oil, and lemon juice to make the dressing.
Combine the cooled pasta with cherry tomatoes, red onion, bocconcini, spinach, and basil in a large bowl. Add the dressing and toss gently to coat. Season with salt and black pepper to taste.
