A vibrant and fresh pasta salad combining colorful vegetables, cheese, and a flavorful pesto dressing, perfect for a quick lunch or side dish.

Ingredients

Dry ingredients

  • 12 ounces bow tie pasta
  • 2 cups cherry tomatoes (halved)
  • 0.25 cup red onion (diced)
  • 1 cup bocconcini cheese (halved)
  • 1 cup spinach (packed, finely chopped)
  • 0.5 cup basil (finely chopped)
  • 3 tablespoons pesto
  • 2 tablespoons olive oil
  • 0.5 lemon lemon juice

Instructions 

  • Cook the bow tie pasta in heavily salted boiling water until al dente, then drain and toss with a little olive oil to prevent sticking. Let it cool to room temperature.
  • In a small bowl, whisk together pesto, olive oil, and lemon juice to make the dressing.
  • Combine the cooled pasta with cherry tomatoes, red onion, bocconcini, spinach, and basil in a large bowl. Add the dressing and toss gently to coat. Season with salt and black pepper to taste.

Notes

For best flavor, let the salad sit for 15 minutes before serving to allow the flavors to meld.
