A nutritious and delicious layered parfait combining protein-rich quinoa, fresh blueberries, and creamy yogurt for a perfect breakfast or snack.

Ingredients

quinoa

  • 1 cup quinoa (well rinsed)
  • 2 cups water

yogurt

  • 2 cups vanilla yogurt

blueberries

  • 2 cups blueberries

pecans

  • 1/4 cup pecans (toasted and coarsely chopped)

Instructions 

  • Bring quinoa and water to a boil, then simmer until water is absorbed and quinoa is tender, about 15-20 minutes.
  • Chill the cooked quinoa in the fridge.
  • Layer quinoa, yogurt, blueberries, and pecans in glasses to assemble the parfait.

Notes

For added flavor, drizzle honey or add a sprinkle of cinnamon.
