Start your day with these delicious and wholesome blueberry oat breakfast bars, perfect for a quick, nutritious breakfast on the go.

Ingredients

Dry ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 0.5 cup light brown sugar, packed
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Wet ingredients

  • 0.5 cup unsalted butter, melted and cooled
  • 0.25 cup plain Greek yogurt
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Blueberry mixture

  • 2 cups fresh blueberries, or frozen thawed and drained
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice

Instructions 

  • Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment paper.
  • Mix dry ingredients; in a separate bowl, whisk wet ingredients. Combine and reserve 1 cup for topping.
  • Press remaining mixture into pan; toss blueberries with sugar, cornstarch, and lemon juice, then spread over base.
  • Crumble reserved mixture over blueberries; bake for 30-35 minutes until golden and bubbling.
  • Cool completely, then cut into 16 bars and wrap if desired.

Notes

For best results, use fresh blueberries when in season.
