Ingredients

Dairy and Butter

  • 1 tablespoon Unsalted Butter (A light coating is all you need to ensure your gratin doesn't stick to the dish.)

Root Vegetables

  • 2 pieces Sweet Potatoes (These lend a beautiful natural sweetness and a creamy texture when cooked.)
  • 4 pieces Parsnips (Their subtle earthy sweetness and firm texture hold up wonderfully in this bake.)
  • 5 pieces Small Beets (Adds a gorgeous jewel-tone color and a grounding earthy note; slice thinly to manage their vibrant juice.)

Seasonings

  • to taste N/A Salt and Pepper (Essential for bringing out the natural flavors of our star root vegetables.)

Cream and Cheese

  • 14 tablespoons Heavy Cream (This is the base for our luscious, velvety sauce that coats every slice.)
  • 4 ounces Grated Parmesan Cheese (Adds a delightful nutty, salty complexity that melts beautifully between the layers.)
  • 1 ounce Shredded Gruyère Cheese (This nutty, slightly sweet cheese melts into a glorious golden crust.)

Herbs and Aromatics

  • 1 clove Garlic (Just one small clove adds a warm, savory depth that elevates the cream.)
  • 1 tablespoon Fresh Minced Thyme (This aromatic herb weaves through the gratin, adding a fragrant, earthy perfume.)

Instructions

  • Preheat oven to 375°F (190°C). Grease a baking dish with butter.
  • Thinly slice the root vegetables and layer them in the dish, seasoning with salt, pepper, garlic, and thyme as you go.
  • Mix heavy cream with Parmesan and Gruyère cheeses, then pour evenly over the layered vegetables.
  • Bake uncovered for 45 minutes until golden and bubbly.

Notes

For a crispier top, broil for an additional 2-3 minutes at the end.
