Delicious and easy-to-make no-bake chocolate oatmeal bars perfect for a quick treat or snack.

Ingredients

Dough

  • 1 cup butter
  • 1 2 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1 2 cup peanut butter

Instructions 

  • Line an 8-inch or 9-inch square baking dish with parchment paper.
  • Melt butter and brown sugar in a saucepan over medium heat until smooth; stir in vanilla and oats. Cook for 3-4 minutes.
  • Press half of the oat mixture into the prepared dish; set aside the remaining half.
  • Melt peanut butter and chocolate chips together until smooth; spread over the crust, reserving 1/4 cup for drizzling.
  • Top with remaining oat mixture, press gently, drizzle with remaining chocolate, and refrigerate for 2-3 hours before cutting.

Notes

Keep refrigerated for best results and cut into bars before serving.
