A simple and flavorful egg salad perfect for sandwiches, wraps, or straight from the bowl.

Ingredients

Eggs

  • 6 pieces eggs (room temperature)
  • 0.25 cup red onion (finely diced)
  • 0.25 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons parsley (finely diced)
  • 2 tablespoons chives (finely diced)
  • 1 teaspoon lemon juice
  • to taste kosher salt and freshly ground black pepper

Instructions 

  • Boil the eggs for 12 minutes, then transfer to ice water to cool.
  • Peel and chop the eggs, then combine with red onion, chives, parsley, mayonnaise, Dijon mustard, lemon juice, salt, and pepper in a bowl.
  • Mix until well combined and serve immediately or chilled.

Notes

For extra flavor, add a pinch of paprika or chopped celery.
