A simple and flavorful egg salad perfect for sandwiches, wraps, or straight from the bowl.
Ingredients

red onion (finely diced)

Instructions
Boil the eggs for 12 minutes, then transfer to ice water to cool.
Peel and chop the eggs, then combine with red onion, chives, parsley, mayonnaise, Dijon mustard, lemon juice, salt, and pepper in a bowl.
Mix until well combined and serve immediately or chilled.
Notes
For extra flavor, add a pinch of paprika or chopped celery.
