This quick and healthy chicken and zucchini noodle dish is perfect for a flavorful, low-carb meal that comes together in minutes.

Ingredients

Protein

  • 1 lb thinly sliced chicken breast

Oil

  • 3 tablespoons olive oil

Vegetables

  • 2 lbs spiralized zucchini (about 3 medium zucchinis)

Dairy & Butter

  • 2 tablespoons butter

Aromatics & Spices

  • 2 finely chopped garlic cloves garlic cloves
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Instructions 

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook chicken until browned and cooked through, about 5-7 minutes. Remove and set aside.
  • Add remaining olive oil and butter to the skillet. Sauté garlic and spices for 1 minute.
  • Add zucchini noodles and cook for 3-4 minutes until tender.
  • Return chicken to the skillet, toss to combine, and cook for another 2 minutes. Season with salt and pepper.
  • Serve hot, garnished as desired.

Notes

Use fresh garlic for the best flavor and adjust spice levels to taste.
