  • 2 tbsp unsalted butter
  • 1 cup white mushrooms, sliced
  • Pinch salt and pepper
  • 0.5 cup yellow onion, sliced
  • 0.5 cup green pepper, sliced
  • 2 cups cooked rice, white or brown
  • Leftover BBQ brisket
  • Fresh cilantro leaves for garnish

Instructions 

  • Cook rice according to package instructions.
  • Saute mushrooms in butter with salt and pepper until softened.
  • Add onions and green peppers; cook until tender crisp. Season as needed.
  • Divide rice into bowls, top with vegetables and shredded brisket.
