Ingredients

Meat

  • 2 lbs boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 small yellow onion finely chopped
  • 2 cloves garlic minced
  • 1.5 cups barbecue sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper

Coleslaw

  • 3 cups green cabbage finely shredded
  • 1 cup purple cabbage finely shredded
  • 1 medium carrot grated
  • 0.5 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • to taste Salt and pepper
  • 6 buns soft burger buns

Optional toppings

  • to taste Pickles, extra BBQ sauce, jalapeño slices (Optional toppings)

Instructions 

  • Cook chicken thighs with olive oil, onion, garlic, barbecue sauce, vinegar, paprika, salt, and pepper until tender and shredded.
  • Prepare coleslaw by mixing shredded cabbages, grated carrot, mayonnaise, vinegar, sugar, salt, and pepper.
  • Assemble burgers by placing pulled chicken on buns, topping with coleslaw, and adding optional toppings as desired.

Notes

For extra flavor, add pickles, BBQ sauce, or jalapeño slices as desired.
