Enjoy these flavorful BBQ meatloaf muffins packed with beef, quinoa, and a smoky barbecue glaze, perfect for a quick and satisfying meal.

cooked quinoa

barbecue sauce (divided)

Instructions
Preheat oven to 425°F (220°C). Spray a muffin tin with cooking spray.
Mix all ingredients except half of the BBQ sauce until well combined.
Divide mixture into 16-18 muffins, then spread remaining BBQ sauce on top.
Bake for 25-30 minutes until internal temperature reaches 160°F (71°C).
Cool slightly, then serve garnished with parsley if desired.
