Ingredients

Meat and grains

  • 2 pounds extra lean ground beef
  • 1 cup cooked quinoa
  • 1/2 cup barbecue sauce (divided)
  • 1/4 cup grated onion
  • 2 cloves garlic (minced)
  • 1/4 cup finely chopped fresh parsley
  • 1/2 cup freshly grated parmesan cheese
  • 1 egg egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions 

  • Preheat oven to 425°F (220°C). Spray a muffin tin with cooking spray.
  • Mix all ingredients except half of the BBQ sauce until well combined.
  • Divide mixture into 16-18 muffins, then spread remaining BBQ sauce on top.
  • Bake for 25-30 minutes until internal temperature reaches 160°F (71°C).
  • Cool slightly, then serve garnished with parsley if desired.

Notes

You can prepare these muffins ahead and reheat for a quick meal.
