A flavorful and colorful salad featuring tender BBQ chicken, fresh vegetables, and a creamy ranch dressing.

Ingredients

Meat

  • 2 pieces chicken breasts (boneless, skinless)

Vegetables

  • 1 large red bell pepper (chopped)
  • 1 large red onion (cut into bite-sized pieces)
  • 1 large tomato (semi-ripe, cut into bite-sized pieces)
  • 1 head romaine lettuce (cleaned and chopped)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup brown sugar
  • 1 cup ketchup
  • 1 tablespoon minced garlic
  • 2 cups ranch dressing
  • 1/2 cup carrot (shredded)
  • 2 cups black beans (cooked and rinsed)
  • 1 cup sweet white corn kernels (cooked and cooled)

Oils & seasonings

  • 3 tablespoons olive oil
  • 1 teaspoon paprika

Instructions 

  • Slice chicken breasts into three-inch strips and cook in heated olive oil until golden and cooked through.
  • Whisk ketchup, brown sugar, paprika, and minced garlic to make BBQ sauce, then pour over cooked chicken and cook until caramelized.
  • Refrigerate chicken to cool, then chop romaine lettuce and layer in a large bowl.
  • Add black beans, corn, red onion, tomato, shredded carrot, and red bell pepper over the lettuce.
  • Drizzle ranch dressing, sprinkle cheddar cheese, top with cooled BBQ chicken, and serve.

Notes

For extra flavor, let the chicken sit in the BBQ sauce for 10 minutes before serving.
