Instructions
Slice chicken breasts into three-inch strips and cook in heated olive oil until golden and cooked through.
Whisk ketchup, brown sugar, paprika, and minced garlic to make BBQ sauce, then pour over cooked chicken and cook until caramelized.
Refrigerate chicken to cool, then chop romaine lettuce and layer in a large bowl.
Add black beans, corn, red onion, tomato, shredded carrot, and red bell pepper over the lettuce.
Drizzle ranch dressing, sprinkle cheddar cheese, top with cooled BBQ chicken, and serve.
Notes
For extra flavor, let the chicken sit in the BBQ sauce for 10 minutes before serving.
