This flavorful rice bowl combines tender BBQ chicken with corn, cheese, and crispy onions for a satisfying meal.

Ingredients

Protein

  • 2 lbs chicken breasts or thighs
  • 1 cup BBQ sauce
  • 0.25 cup honey
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp chili flakes
  • to taste Salt and pepper
  • 3 cups cooked rice
  • 1 cup corn
  • 0.5 cup shredded cheese

Toppings

  • Crispy onions crispy onions (for topping)

Instructions 

  • Mix BBQ sauce, honey, vinegar, and spices. Pour half into slow cooker.
  • Add chicken and top with remaining sauce. Cook on low for 6 hours or high for 3-4 hours until tender.
  • Shred chicken, stir back into sauce, and serve over rice with corn, cheese, and crispy onions.
