BBQ Chicken Quesadilla

A delicious and easy-to-make quesadilla filled with smoky BBQ chicken, melted cheese, and sautéed peppers and onions.

Ingredients

Protein

  • 2 cups cooked chicken, shredded
  • 1.5 cups BBQ sauce

Cheese

  • 1.5 cups shredded cheese (cheddar or mozzarella)

Vegetables

  • 1 cup bell peppers, sliced (Any color)
  • 0.5 cup red onion, thinly sliced

Other

  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional fresh cilantro for garnish

Instructions 

  • Mix shredded chicken with BBQ sauce until evenly coated.
  • Sauté bell peppers and red onion in 1 tablespoon olive oil for 3-4 minutes; season with salt and pepper.
  • Place a tortilla in a skillet, spread a quarter of chicken mixture, sprinkle cheese, and add sautéed vegetables; fold in half.
  • Cook for 3-4 minutes until golden, flip, and cook another 2-3 minutes until cheese melts.
  • Repeat with remaining tortillas. Slice into wedges, garnish with cilantro if desired, and serve warm.

Notes

For extra flavor, add a squeeze of lime or hot sauce before serving.
