Instructions
Preheat grill to medium-high. Press and cube tofu.
Mix 2 tbsp olive oil with spices; coat tofu in mixture.
Toss vegetables with 1 tbsp olive oil, salt, and pepper.
Thread tofu and vegetables onto skewers.
Grill skewers 2 minutes per side, brushing with barbecue sauce in last minutes. Garnish with parsley.
Notes
Soak skewers if using wooden ones to prevent burning.
