A moist and flavorful cake layered with creamy white chocolate frosting and crunchy walnuts, perfect for special occasions.

Ingredients

Cake Batter

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1.5 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 4 ripe bananas mashed
  • 1 cup buttermilk
  • 1.5 cups chopped walnuts

Frosting

  • 16 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 8 oz white chocolate, melted and cooled
  • 0.25 cup heavy cream

Decoration

  • additional chopped walnuts for decoration

Instructions 

  • Preheat oven to 350°F (175°C). Prepare two 9-inch pans.
  • Mix dry ingredients; beat butter and sugar, add eggs, vanilla, and bananas. Alternate adding dry mix and buttermilk.
  • Fold in 1 cup walnuts, divide batter into pans, and bake for 25-30 minutes. Cool completely.
  • Prepare frosting by beating cream cheese, butter, powdered sugar, vanilla, and white chocolate. Fold in whipped cream.
  • Assemble cake: layer frosting between cakes, cover with remaining frosting, and decorate with chopped walnuts.

Notes

For best results, use very ripe bananas for extra flavor and moisture.
