These healthy and delicious breakfast cookies are quick to make and perfect for on-the-go mornings.

Ingredients

Bananas

  • 2 pieces ripe bananas, mashed

Oats

  • 2 cups old fashioned rolled oats

Nut Butter

  • 0.5 cup peanut butter or almond butter

Maple Syrup

  • 0.25 cup maple syrup

Vanilla Extract

  • 1 teaspoon vanilla extract

Ground Cinnamon

  • 1 teaspoon ground cinnamon

Baking Powder

  • 0.5 teaspoon baking powder

Sea Salt

  • 0.25 teaspoon fine sea salt

Chocolate Chips or Raisins

  • 0.5 cup mini chocolate chips or raisins

Chopped Walnuts (Optional)

  • 0.25 cup chopped walnuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mash bananas in a large bowl until smooth.
  • Mix in nut butter, maple syrup, vanilla, cinnamon, baking powder, and salt.
  • Fold in oats, chocolate chips, and walnuts if using.
  • Scoop and flatten dough onto baking sheet, then bake for 15 minutes.
  • Cool before storing.

Store in an airtight container for up to 3 days.
