Ingredients

  • 3 pieces very ripe bananas, mashed (about 1½ cups)
  • 0.5 cup unsalted butter, melted and cooled
  • 0.25 cup neutral oil
  • 0.75 cup brown sugar, packed
  • 0.25 cup granulated sugar
  • 2 large eggs, room temperature
  • 0.25 cup plain yogurt or sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon

Instructions 

  • Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  • Mix mashed bananas, melted butter, oil, brown sugar, and granulated sugar until smooth.
  • Add eggs one at a time, mixing well after each. Stir in yogurt and vanilla.
  • Sprinkle baking soda, baking powder, salt, and cinnamon; gently stir to combine. Fold in flour until just combined.
  • Divide batter among muffin cups, bake 18-22 minutes until golden and a toothpick comes out clean. Cool before serving.

Notes

Use ripe bananas for best flavor and moisture.
