Ingredients

Dry ingredients

  • 1.5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt

Wet ingredients

  • 0.5 cup granulated sugar
  • 1 large egg
  • 3 large ripe bananas mashed
  • 0.25 cup melted unsalted butter
  • 1 teaspoon pure vanilla extract

Instructions 

  • Preheat oven to 350°F (180°C) and line a muffin pan with liners.
  • Combine dry ingredients in a bowl and set aside.
  • Whisk together sugar, egg, mashed bananas, melted butter, and vanilla in a large bowl.
  • Add dry ingredients to wet and stir until just combined.
  • Divide batter evenly into muffin liners and bake for 25-30 minutes.
  • Cool muffins on a rack and serve at room temperature.
