Ingredients

Muffin Batter

  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and chopped

Streusel Topping

  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup cold unsalted butter (cubed)
  • 1/2 teaspoon ground cinnamon

Instructions 

  • Preheat oven to 400°F (200°C). Line a muffin tin.
  • Mix dry ingredients; in a separate bowl, whisk wet ingredients.
  • Combine wet and dry; fold in strawberries.
  • If using, prepare streusel and sprinkle over batter.
  • Spoon batter into cups; bake 18-22 mins. Cool before serving.

Notes

For a bakery-style dome, start at 425°F for 5 mins, then reduce to 375°F.
