Ingredients

Vegetables

  • 2 sized Zucchinis (grated)
  • 7 oz Cherry Tomatoes (diced)
  • 1 medium Onion (diced)
  • 1 medium Potato (grated)

Dry Ingredients

  • 2 1/2 cups Flour (plus extra if needed)
  • to taste Salt and Pepper

Other

  • as needed Olive Oil (for drizzling)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix grated vegetables with flour, salt, and pepper to form a dough.
  • Divide dough into portions and flatten into rounds on a baking sheet.
  • Top with diced cherry tomatoes and drizzle with olive oil.
  • Bake for 20 minutes until golden and crispy.
