A delicious and healthy baked cottage cheese dessert with berries, perfect for a quick treat or breakfast.

Ingredients

Dairy

  • 2 cups cottage cheese (1%, 2% or 4%)
  • 4 large eggs
  • 3 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup cornstarch
  • 1 1/2 cups berries (divided)
  • optional cooking spray (for greasing the dish)

Instructions 

  • Preheat oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  • Blend cottage cheese, eggs, maple syrup, vanilla, cinnamon, and cornstarch until smooth.
  • Stir in 1 cup of berries, pour into the dish, and top with remaining berries.
  • Bake for 45 minutes until set. Cool before slicing.
  • Cut into 9 slices and serve with optional toppings.

Notes

You can use honey instead of maple syrup for a different flavor.
